- Harvest by hand on October 8.
- Fermentation maceration and pneumatic pressing in inert atmosphere.
- 10 months of aging on fine lees in stainless steel tanks.
- Alcoholic strength:13,10 % vol.
- Total tartaric acidity:7,70 g/l.
- Reducing sugars < 1g/l.
- TESTING OBSERVATION:
- SIGHT: Brilliant straw yellow with greenish reflections.
- NOSE: Fresh, powerful and elegant. Aromas of ripe white fruit, balsamic and citrus stand out, accompanied by notes reminiscent of pastries.
- TASTE: Unctuous, fresh, long and with a vibrant acidity.
- RETRONASAL/AFTERTASTE: Powerful and persistent.
- PAIRING: Very versatile. It is ideal for vegetables, fish, pasta and shellfish, cheeses, white meats...
